You guys are foodies after my own heart! I got a lot of messages requesting a recipe for pancakes that is healthier than what you’d normally make from the box. I have a go-to recipe for banana pancakes that I use, and they taste more like a French crepe than the standard bland pancakes we’re used to. They’re slightly crisp on the outside and moist and fluffy on the inside.

Ingredients
- 1 cup all-purpose flour (I also tried it with whole grain flours and gluten-free, and those worked too)
- 1/2 cup unsweetened almond milk (or any milk)
- 1 tsp baking powder
- 1.5 tbsp melted coconut oil
- pinch of salt
- bananas
Instructions
- Mix all ingredients into a bowl and stir vigorously until fully incorporated.
- Heat a medium pan over medium heat and be sure it’s hot before starting to pour the batter!
- Using a tiny bit of coconut oil, grease the pan before each pancake goes down. Pour about 1/8 – 1/4 cup of batter onto hot pan and cook approximately 3 minutes on each side or until golden brown.
- Cut bananas (or any other fruit you like) into slices and put them on the pancakes
Serve immediately with your favorite toppings!
